Lunch

Dinner

Lemon basil creamy pasta with ground chicken, spring peas, zucchini, toasted pinenuts & parmesan (can request GF or DF)

Tuesday

Baked frittata: chicken sausage, aged cheddar, zucchini & chives frittata with quinoa & arugula (GF)

Lunch

Taco Tuesday bowl: salsa verde shredded chicken, black beans, corn, fresh pineapple, pepita seeds, cucumber, shredded cabbage & carrots, pickled red onion & jalapeno with an avocado cilantro dressing (GF, DF)

Dinner

Swedish turkey & spinach meatballs with berry ginger compote over egg noodles (DF, can request GF)

Wednesday

Egg cup: garlic roasted potatoes, peppers & onions, avocado, chickpeas, chive scrambled eggs & cheddar cheese (GF, can be DF upon request)

Lunch

Chicken Salad bowl: Greek chicken salad (lemon, oregano, dill, etc.) chickpeas, feta, cucumbers, red onion, artichokes, grape tomatoes, quinoa, mixed greens with a cucumber herb dressing (GF, DF)

Asian chicken burger with “fried” rice and sesame roasted broccoli (GF, DF)

Thursday

Apple cinnamon whipped oatmeal with toasted pecans, almond butter & hemp seeds (Vegan, GF)

Lunch

Super veg bowl: roasted Japanese sweet potatoes, edamame, chickpeas, roasted zucchini, spring peas, shredded carrots, cucumber, corn, sunflower seeds, quinoa, mixed greens with a lemon Dijon herb dressing (Vegan, GF)

Dinner

Half roasted sweet potato with buffalo ground chicken, rice, pickled jalapenos, cheddar cheese, pinto beans & sauteed peppers & onions (GF, can be DF upon request)
